Lai Gaohuai
Lineage & School of Heritage
Lai Gaohuai is the seventh-generation inheritor of the brewing craftsmanship of Luzhou Laojiao liquor.
Mastery, Signature Works & Repertoire
A man of Han ethnicity, he was born in 1934 in Luzhou, Sichuan. A national representative bearer of Luzhou Laojiaojiuniangzhijiyi (the brewing craftsmanship of Luzhou Laojiao liquor), a first-batch national intangible cultural heritage project, an international master of brewing, and a recipient of the special government allowance granted by the State Council to experts in science and technology with outstanding contributions. He collected and collated analytical data on the solid-state fermentation process of Chinese white liquor, accumulating a large quantity of precious data for the traditional brewing industry. Lai Gaohuai analyzed, studied and summarized the fermentation mechanism, brewing process and production flow of Luzhou Laojiao liquor, confirming such effective measures for improving product quality as layered addition of distilled spirit, interrupted-blowing return of distilled spirit, and nurturing the pit with fermented grains. His 1959 book Luzhou Laojiao Daqu Liquor, the first brewing-technique manual of strong-aroma (nongxiang) white liquor, became the textbook that standardized the production enterprises of strong-aroma white liquor across the country. In 1963, representing Luzhou Laojiao, he took part in the drafting of the standardization documents for China's eight famous white liquors, establishing the industry standards for strong-aroma white liquor. Over a working career of several decades, he wrote more than 1.5 million characters of treatises on brewing.
Honors & Recognition
He led a group of Luzhou Laojiao research personnel in separation, cultivation and mutation-induction experiments on the butyric acid bacteria and caproic acid bacteria in the aged pit mud, shortening the maturation period of the mud pits from fifty years to five and giving enormous impetus to the development and popularization of strong-aroma white liquor. The disciples he has trained are found in all the major strong-aroma white liquor distilleries throughout the country.
