Pickle Making Craftsmanship
01 · Historical Records
Beijing's Liubiju old sauce garden was built around the Jiajing reign of the Ming dynasty, and took its name from its 'six musts' business philosophy that emphasized product quality. The pickles it makes have long been renowned for their rich sauce aroma and fresh, sweet, crisp tenderness, and have been praised in the literary jottings of scholars since the Qing dynasty.
02 · Core Techniques & Process
Liubiju was founded by the three Zhao brothers from Linfen County, Shanxi Province, and has a history of over four hundred seventy years to this day, making it one of Beijing's famous time-honored brands. The traditional pickle-making craft of Liubiju has long been known for its unique selection of materials, complex preparation, and rigorous technique, and has been passed down through generations by word of mouth for a long time. Its production and processing emphasize quality, its management and operation stress integrity, its products are rich and varied, its packaging novel and distinctive, and its service warm and attentive, earning it a good reputation among the broad customer base—the key reason Liubiju has endured for centuries without decline. As a long-established famous time-honored brand in Beijing, Liubiju possesses a series of rich and profound corporate-culture concepts. First, it adheres to the traditional 'six musts' production-and-management philosophy, insisting that 'the glutinous rice and rice must be uniform, the sprouted grain and yeast must be solid, the washing and boiling must be clean, the spring water must be fragrant, the pottery vessels must be fine, the fire timing must be right'—that is, the ingredients must be complete, the additions must be sufficient, the production process must be clean, the water must be pure, the equipment must be excellent, and the heat must be appropriate. In management and operation Liubiju pursues standardization and is rooted in integrity; it adopted early on such operating models as contract partnership and the shareholding system, while also valuing cultural promotion, providing good reference for the building of modern corporate culture and business-operating models, and accumulating rich commercial-cultural connotation.
The six musts of production
Complete ingredients, sufficient dosing, clean processing, pure water, sound vessels and correct heat: the six musts turn the whole craft into six checkable links.
Selecting and pickling vegetables
Beijing pickles rest on the hardy roots and gourds of the suburbs, sorted, washed, dried and then layered and pressed in vats.
Storing and sealing the vats
The sealed vats rest so that salt keeps penetrating and aromas marry; the length of rest and the tightness of the seal decide the crispness and sauce aroma of the pickle.
Yang Yinxi's pickling skill
Entering the shop in 1980 and apprenticed to the eleventh-generation Dong Zhiwu, he mastered selection, pickling and storing.
Developing new sweet-pickle lines
From 1989 to 1993 the workshop designed sweet-pickled cucumber and related new lines while keeping the traditional pickling basis.

Liubiju's name hung not only on its storefront signboard; its six requirements later became the prevailing quality yardstick for northern sauce gardens. 'The glutinous rice and rice must be uniform' and 'the sprouted grain and yeast must be solid' bear on raw materials; 'the washing and boiling must be clean' and 'the spring water must be fragrant' bear on water and stove; 'the pottery vessels must be fine' bears on vessels; 'the fire timing must be right' bears on heat—the whole set of demands turned an ineffable craft into a standard that could be handed down generation after generation by word of mouth. The scope of the craft's transmission thus also expanded. Taking the transmission chain with Dong Zhiwu as the previous generation and Yang Yinxi as the next as an example: an apprentice who entered the factory in 1980 had to follow through the long-term stages of salting, storage, and so on before being able to work independently; at the same time, Liubiju's craft was repeatedly cited by sauce gardens outside the capital and even by food enterprises in southern provinces, making it a rare technology-exporting party among time-honored brands.
