01 · Historical Records

The introduction of whole-lamb roasting to the Alxa region of Inner Mongolia is directly linked to nomadic life. Alxa whole-roast lamb is a delicacy unique to the Alxa region of Inner Mongolia Autonomous Region; more than three hundred years ago it had already become a treasure on the Alxa princely mansion's banquet tables—that it could appear at the mansion's table shows it was regarded as the top dish more than three centuries ago. Alxa sits between desert and gobi; herds migrate with water and grass, so sheep and oven grew together in one place—this origin is more direct than the various inland accounts of lamb roasting. The Alxa area has a typical temperate continental arid climate, with scant rainfall and high evaporation; its desert thickets of saxaul and red willow provide pasture for grazing and also fuel and flavor found nowhere else. Sheep here grow slowly and taste pure; ovens here are built open with steady fire. One lamb matched with one oven is what earned the reputation of "excellent in color, aroma, taste, and form."

02 · Core Techniques & Process

Alxa whole-roast lamb is a delicacy unique to the Alxa region of Inner Mongolia Autonomous Region, and more than three hundred years ago it had already become a treasure on the Alxa princely mansion's banquet tables. Its roasting method developed from the Mongolian traditional lamb-roasting craft; it is a product of the nomadic people's wisdom and holds an important place in China's food culture. Alxa whole-roast lamb is known for excellence in color, aroma, taste, and form; its raw material is the local-breed wether sheep, whose meat is tender and free of gaminess. When roasting the whole lamb, a specially made oven and special seasonings must be used, and some dozen process steps are needed to finish.

Archived Records of Process Steps

Choosing the native wether sheep

Native wether sheep give fine-grained, odourless meat firm enough to survive a long, high-heat roast.

The special oven and seasoning

A special oven and special seasoning are required, and the whole animal passes through more than ten stages before it is finished.

Saxaul as fuel

Local saxaul burns with strong, steady heat and no off-flavour — exactly what a whole-animal roast needs.

Zhao Tiesuo's forty years at the roast

Zhao Tiesuo roasted whole sheep from 1983 to 1994 in Alxa, then continued at home after retirement and passed the craft to his disciples.

04 · Cultural Value & Contemporary Safeguarding

The whole-lamb roasting craft is a precious cultural heritage passed down through generations by the Mongolian people, rich in local flavor and ethnic character, and a treasure of Mongolian cuisine. Protecting and transmitting the traditional manual craft of Alxa whole-roast lamb is of no small significance for studying the life and folklore of nomadic peoples and for enriching and developing the food culture of the Chinese nation. Zhao Tiesuo (per the official archives of the related inheritor): Male, Mongolian ethnicity, born January 1952, a native of Alxa Left Banner, Inner Mongolia Autonomous Region. Representative inheritor of the third batch of the national-level intangible cultural heritage project, the beef and mutton cooking craft (whole-lamb roasting craft). A technician of whole-lamb roasting. From 1983 to 1984 he roasted whole lambs at the Herdsmen's Guesthouse in Alxa Left Banner, and from 1985 to 1994 roasted whole lambs at the Alxa League Hotel. After retiring in 1994 he continued roasting whole lambs at home and passed the craft to his disciples. He inherited the traditional Alxa whole-lamb roasting craft, and his superb skill raised its renown. Looking at its transmission, a hard part of whole-lamb roasting is that it demands the whole setup: choosing the lamb, dressing the lamb, preparing ingredients, building the oven, tending the fire, mounting the rack, and watching the color—any slack at one point wastes all prior effort. Such skill can only be trained oven by oven at banquets; no other method can teach it. Precisely for this reason, technicians who can tend the oven independently have never been many in Alxa. The craft is mostly taught at banquet venues such as herdsmen's guesthouses and hotels; the apprentice stands by to watch the fire, turn the meat, and take down the rack, and only after watching many times gets a turn—the weight of this craft lies entirely in the measure of those dozen-odd process steps.
